Soybean Oil Hot Pressing & Cold Pressing Cold-pressing (physical pressing) process: Direct pressing without high-temperature steaming or roasting. Advantages: Minimal protein denaturation; good protein retention. Soybean meal usage: Ideal for deep processing; suitable for making dried tofu sticks (fuzhu), tofu skin, and soy protein extraction. Disadvantages: Relatively mild aroma; slightly lower oil yield.
Hot-pressing (high-temperature pressing) process: Pressing after high-temperature roasting of seeds. Advantages: Rich aroma; high oil yield. Soybean meal usage: Significant protein denaturation; suitable for animal feed or soy sauce brewing. Disadvantages: Loss of protein activity.

Cold-pressed soybean oil ("raw" pressing)

Raw soybeans are neither roasted nor steamed; oil is extracted via direct physical pressing with temperatures controlled at ≤60°C throughout—no high-temperature steps involved.
Oil yield: 12%–15%; high residual oil content; low raw material utilization rate.
Soybean meal: Protein remains virtually undenatured; suitable for dried tofu sticks, tofu, and soy protein isolate; high value as a by-product.
Crude oil: Low impurity and acid values; edible after simple filtration and sedimentation; requires minimal refining.

Hot-pressed soybean oil ("cooked" pressing)

Soybeans are first roasted/steamed at 100–130°C for 30 minutes to break down cell structures before pressing.
Oil yield: 18%–20%; high pressing efficiency; the mainstream process for oil mills.
Soybean meal: Protein denatured by high heat; suitable only for animal feed; unsuitable for deep-processed soy products.
Crude oil: High levels of phospholipids and free fatty acids; requires refining to meet quality standards.
